Creative Wine Buying in a Down Market

The first time I realized how severely our guests were cutting back on wine purchases when dining was in early 2009. After a not-so-busy rainy Tuesday at the Wine Spectator Greystone Restaurant, when we’d served about 100 guests, I noticed that there had been only one bottle of wine sold. All other consumption was by the glass. This fact, combined with the doubling of sales calls from distributors and wineries eager or desperate to sell whatever they could, started me thinking. I quickly began to find ways to deliver high-quality wines at price points that wouldn’t leave the guests anxious about ordering a full bottle of wine. The result was a list of 30 wines that we sold for $30 each. Many of these had previously appeared on our wine list for $45, $50, or more. We immediately saw results! We all know that the image of a restaurant with patrons enjoying the open bottles of wine on their table sends a message that you are at a wine destination. Here are some of the ways that I manage to foster and sustain that feeling despite today's economic challenges.
